We often eat enough — but not always deeply enough

In high-income countries, obvious malnutrition is rare. Plates are full, calories are there. But nutritional surveillance data tells a different story: millions of people have insufficient levels of essential micronutrients, without necessarily feeling clear symptoms right away.

NHANES surveys in the US and EFSA data in Europe allow us to draw a fairly accurate picture of the most widespread deficiencies. Here are the five that deserve your attention — and what they mean practically.

Vitamin D: the most documented deficiency

NHANES data shows nearly 41% of American adults have insufficient vitamin D levels (below 50 nmol/L). In Europe, EFSA reports comparable prevalence in many countries, with peaks in winter and in populations with darker skin tones.

Vitamin D plays a role in immunity, bone health, mood regulation, and — increasingly documented — muscle health. Dietary sources are limited (fatty fish, eggs) and skin production depends on sun exposure, which explains prevalence in temperate zones.

Practical recommendation: expose at least your forearms for 15–30 minutes daily in summer. In winter, supplementation of 1,000–2,000 IU/day is reasonable for most adults without specific health conditions. Check your levels with your doctor if you're at risk.

Magnesium: the silent insufficiency

NHANES data indicates nearly 48% of American adults don't meet the recommended daily intake for magnesium. Magnesium is involved in more than 300 enzymatic reactions — including ATP synthesis (cellular energy), nerve and muscle regulation, and blood sugar control.

Modern processed food is low in magnesium — refining strips much of the magnesium from grains. Best food sources: leafy green vegetables, legumes, nuts, seeds, and high-percentage dark chocolate.

Iron: the world's most common deficiency

Iron is the most widespread deficiency globally. It particularly affects women of childbearing age, vegetarians, and endurance athletes (due to losses through sweat and hemolysis).

Iron deficiency develops quietly — chronic fatigue, concentration difficulties, reduced physical performance — before reaching the anemia stage. Women with heavy periods are particularly at risk.

Key point: heme iron (animal sources — red meat, organ meats) is better absorbed than non-heme iron (plant sources). If you're vegetarian or vegan, pair plant iron sources with vitamin C to improve absorption, and have your ferritin levels checked regularly.

Omega-3: the ignored imbalance

The omega-3 problem in Western populations isn't total absence — it's a massive imbalance with omega-6. Most Western populations consume 10–15 times more omega-6 than omega-3, while the optimal ratio is often cited at 4:1 or lower.

Long-chain omega-3s (EPA/DHA) are found primarily in fatty fish (salmon, sardines, mackerel) and seafood. For those who don't eat fish regularly, fish oil or algae oil supplementation (vegan option) can help rebalance the ratio.

Vitamin B12: the plant-based diet trap

Vitamin B12 is virtually absent from plant sources. Strict vegetarians and vegans who don't supplement have insufficient levels in the vast majority of cases according to available studies.

After age 50, gastric absorption capacity for B12 also decreases — older adults are at risk even if they eat meat. Severe B12 deficiency can cause irreversible neurological damage. Supplementation or fortified foods are non-negotiable for vegans.
